The most famous local cheese is grana padano; top-quality grana padano is specifically called 'lodigiano' or 'granone'. Grana Lodigiano, once yellow in colour as saffron was added to the cheese, is not pressed; thus, even after years of ageing, it still shows its characteristic 'drop' (lacrima) that makes it unique.
